It is with great joy that the Les Dames d'Escoffier Mexico Chapter welcomes you to our Fall 2025 Flavors of Mexico journey. Our adventure will begin in Mexico City, where we will immerse ourselves in the vibrant culture and culinary delights of the capital. From there, we will travel to one of the most majestic cities in Mexico: San Miguel de Allende. Often referred to as "the heart of Mexico" due to its central location and rich cultural heritage, San Miguel de Allende is a UNESCO World Heritage Site founded in 1542 by Franciscan friar Juan de San Miguel. The city was later named in honor of Ignacio Allende, a Mexican War of Independence hero.
We are excited to explore this enchanting city and participate in one of the most important holidays celebrated in Mexico: Día de los Muertos (Day of the Dead). The origins of Día de los Muertos stem from ancient Aztec and pre-Columbian Mesoamerican traditions, which later blended with Catholic influences after the Spanish conquest. This celebration honors the dead while celebrating the continuity of life.
In ancient Mesoamerican cultures, including the Aztecs, death was viewed as a natural part of the life cycle rather than an end. It was believed that the soul embarked on a journey to the Land of the Dead, or Mictlán, and rituals and offerings were made to honor and guide the deceased. A key figure in these rituals was Mictecacihuatl, the goddess of the underworld, also known as the Lady of the Dead.
After the Spanish arrived, Catholic traditions, including All Saints' Day (November 1st) and All Souls' Day (November 2nd), were introduced. These days coincided with indigenous observances, leading to a fusion of the two traditions. The result is the vibrant, colorful celebration we know today as Día de Los Muertos.
Modern celebrations include the creation of ofrendas (altars), which families set up to honor their deceased loved ones. These altars are decorated with photos, candles, flowers (especially marigolds), and the favorite foods and beverages of the departed. Among the most iconic symbols of Día de los Muertos is La Catrina, a skeletal figure created by the Mexican artist José Guadalupe Posada. La Catrina has become a beloved emblem of the holiday, embodying the mix of life, death, and Mexican cultural pride.
Join us as we journey through Mexico’s culinary traditions and honor the beloved customs of Día de los Muertos. This trip will be filled with rich history, unforgettable experiences, and delicious food, celebrating both life and legacy.
Due to the immense popularity of both the holiday and San Miguel de Allende, as well as the uniqueness of this special journey, we must quickly commit to our host hotels. In Mexico City, we will be staying at the Presidente Continental, a luxurious hotel that offers the perfect blend of comfort and elegance in the heart of Polanco. In San Miguel de Allende, our accommodations will be at Live Aqua, an exquisite hotel that promises a relaxing and indulgent stay in one of Mexico's most beautiful and culturally rich cities.
This unforgettable adventure will span 6 nights. A detailed program will be sent out in the coming months as we are working with the destinations to create a wonderful experience. If you have never attended Flavors of Mexico and are concerned about committing to our program, we will be happy to connect you with the many Dames who have participated year after year.

Cancellations will be accepted with the following refund policy:
From the time of Registration:
– Cancellations until April 29, 2025: 100% Refund (less a $50 processing fee)
– Cancellations until May 1, 2025: 75% refund (less a $50 processing fee)
– Cancellations until June 28, 2025: 50% refund (less a $50 processing fee)
– Cancellations after June 29, 2025: 0% refund
We understand that plans can change, and we hope this provides peace of mind as you finalize your commitment to this extraordinary trip. This time our cancelation policy has to be strict due to the popularity and high demand of these dates and from our vendors. Flavors of Mexico was designed to support and fund the annual dues for the entire Mexico Chapter. Additionally, it provides financial assistance for many Mexico Dames to attend the LDEI Annual Conference and supports community projects led by women in lower-income communities. We extend our heartfelt gratitude to LDEI, its board members, and the entire membership for their continuous support and enthusiastic embrace of every trip we have organized.
